SALTINE COOKIES (Aunt Jan's recipe, and Melissa won first prize in the cookie category at the 2004 Chocolate Fest with this one)

35 saltine crackers (5 x 7 = 35 crackers)
1 stick butter
¾ cup sugar (try 1/2 cup for better salt/sweet ratio)
12 oz chocolate chips (try 6 oz instead of 12 oz for better ratio)
chopped nuts

Melt butter and sugar in saucepan, cook until bubbly.

Spray cookie sheet with non-stick spray, then cover cookie sheet with single layer of saltines.  Pour butter/sugar over them. Bake at 350 for 5-10 minutes, until brown.

Remove from oven, cover with chocolate chips. Bake 5 minutes.

Remove, spread soft chocolate over crackers and cover with chopped nuts.

Refrigerate until chocolate is hard. Break into pieces to serve.

HINT - use a cookie sheet with a lip around it, because the crackers tend to slide apart in the oven.  The lip will hold them in place.
