
AVOCADO PESTO
2c. basil, parsley or spinach leaves, packed
3 cloves garlic
1 oz. peeled ginger root
1 ripe avocado
1/3 to 1/2 c. olive oil
¼ c. sliced almonds
squirt of lemon juice
1 pound pasta
Put first seven ingredients in a blender and whirl until creamy. Mix with pasta.
Add salt, pepper and parmesan at the table.
